Chicken Fajitas

Serves 4


  • 2 skinless, boneless chicken breasts, sliced into thin strips
  • 1 tbsp olive oil
  • 1 red capsicum, sliced
  • 1 green capsicum, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chilli powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Juice of 1 lime
  • Salt and pepper to taste
  • 4 small wheat tortillas
  • Optional toppings: salsa, guacamole, 
  • Greek yogurt, cilantro, lime wedges


  1. Heat olive oil in a large pan over medium-high heat.
  2. Add sliced chicken to the pan and cook for 4-5 minutes until browned and cooked through.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, add the sliced capsicums, onion, and minced garlic. 
  5. Cook for about 5 minutes until the vegetables are tender-crisp.
  6. Add the chilli powder, ground cumin, smoked paprika, and cayenne pepper to the pan. Stir well to coat the vegetables with the spices.
  7. Return cooked chicken to the pan and stir everything together. Cook for 2 minutes.
  8. Squeeze the lime juice over the chicken and vegetables. Season with salt and pepper to taste. Stir well to combine.
  9. Warm the tortillas in a microwave or lightly toast in a dry skillet.
  10. Divide the chicken and vegetable mixture among the tortillas, spooning it into the centre.
  11. Fold the tortillas over the filling to form fajitas.
  12. Serve the chicken fajitas with your choice of toppings.
